Description

This cardamom pistachio cake is a rich, aromatic dessert made with Greek yogurt, roasted pistachios, and warm spices. Topped with a creamy cardamom cream cheese buttercream, it’s moist, nutty, and perfect for any celebration.


Ingredients

1 3/4 cup (373g) packed light brown sugar

1 cup (113g) whole wheat flour

1 cup (120g) all-purpose flour

2 oz (4 tbsp / 57g) salted butter, melted

1 cup (227g) plain, unsweetened Greek yogurt (not non-fat)

1 cup (120g) roasted, lightly salted shelled pistachios, roughly chopped

1 large egg, at room temperature

1 tsp (4g) baking powder

1 1/4 – 2 tsp ground cardamom

1/2 tsp (3g) baking soda

1/4 tsp (1.5g) table salt

For the Cream Cheese Buttercream:

6 tbsp (85g) butter, room temperature

3/4 cup (170g) cream cheese, room temperature

1 1/2 tsp pure vanilla extract

1/2 tsp salt

1/4 tsp ground cardamom

1 3/4 cup (200g) powdered sugar


Instructions

1. Preheat oven to 350°F (176°C). Prepare a deep 8-inch round cake pan by greasing it and lining the bottom with parchment paper, then flouring the pan.

2. In a large bowl, combine the brown sugar, both flours, and melted butter. Mix until the mixture resembles coarse crumbs.

3. Take 1 cup of the crumb mixture and press it evenly into the bottom of the prepared cake pan.

4. Add the Greek yogurt, chopped pistachios, egg, cardamom, baking powder, baking soda, and salt to the remaining crumb mixture. Mix on low speed just until smooth.

5. Pour the batter into the cake pan and smooth it evenly over the crumb base.

6. Bake for 60–70 minutes, or until a toothpick inserted into the center comes out clean.

7. Cool in the pan for 5 minutes, then transfer to a wire rack and allow to cool completely.

8. To make the frosting, beat the butter, cream cheese, vanilla, cardamom, salt, and powdered sugar until fluffy and smooth, about 5 minutes.

9. Spread the frosting over the cooled cake and garnish with extra pistachios if desired.

Notes

Unfrosted, the cake can be stored tightly wrapped at room temperature for up to 2 days.

Once frosted, refrigerate and consume within 3 days.

Bring slices to room temperature before serving for best flavor.
