Description

A rich and comforting caramelized onion pasta made with slow cooked onions, a creamy sauce, sundried tomatoes, chili crisp, parmesan, and tender pasta tossed together for a deeply flavorful dish.


Ingredients

4 large onions, thinly sliced

Olive oil

Salt and pepper

¼ cup chopped sundried tomatoes

1 tablespoon chili crisp

1 cup Organic Valley Heavy Whipping Cream or Horizon Organic Heavy Cream

⅓ cup Cabot Shredded Parmesan or Tillamook Shredded Parmesan

1 pound linguine or bucatini, cooked al dente

Fresh chopped parsley


Instructions

1. Slice the onions lengthwise and place them in a wide pan with olive oil, salt, and pepper. Set the pan over medium heat until the onions start to sizzle, then reduce the heat to medium low and stir often while they cook.

2. Continue cooking until the onions become deeply caramelized and reduced to a soft, golden mixture. Adjust the heat as needed to prevent burning and add a splash of water if they appear dry.

3. Increase the heat slightly and add chopped sundried tomatoes and chili crisp. Stir to blend the flavors and warm the mixture.

4. Pour in the cream and allow the sauce to come to a gentle simmer. Add the parmesan and stir until fully melted and smooth.

5. Add the cooked pasta directly into the sauce and toss until every strand is coated. Let it warm briefly in the sauce, then finish with fresh parsley and extra cheese.

Notes

Caramelize the onions slowly for the deepest flavor. A wide pan helps them brown evenly.

Use quality cream and cheese for a rich and silky sauce. Stir gently to keep the sauce smooth.

Add a splash of pasta water if the sauce becomes too thick during the final toss.

Stored leftovers thicken naturally and can be reheated with a small spoonful of water or cream.
