Description
A hearty Cajun Sausage and Rice One Pot dish made with beef smoked sausage, aromatic vegetables, Cajun seasoning, and tender long grain rice cooked together for a rich, smoky, and comforting meal.
Ingredients
2 Tbsp olive oil, divided
14 oz Midamar Beef Smoked Sausage, sliced into 1/4 inch rounds
1 large onion, chopped
5 garlic cloves, minced
1 red bell pepper, cut into 1 inch pieces
1 yellow bell pepper, cut into 1 inch pieces
2 tsp Cajun seasoning
1 tsp smoked paprika
1 1/2 cups uncooked long grain white rice
3 cups low sodium chicken stock
2 cups frozen peas
Instructions
1. Heat 1 tablespoon olive oil in a large deep skillet over medium high heat and add the sliced sausage and stir.
2. Increase heat to high and brown the sausage for several minutes stirring often then remove it to a plate and return the skillet to the heat.
3. Add the remaining olive oil then add the onion and cook while stirring until softened then add the garlic and cook briefly until fragrant.
4. Add the bell peppers and continue cooking while stirring until they begin to soften.
5. Stir in the Cajun seasoning smoked paprika rice and chicken stock along with the browned sausage then bring to a simmer.
6. Reduce heat to low cover with a lid and allow to simmer until the rice is tender.
7. Remove the lid scatter the peas over the top without stirring replace the lid remove from heat and let rest before stirring and serving.
Notes
Use Midamar Beef Smoked Sausage or Al Safa Beef Sausage for rich flavor.
Long grain rice helps achieve fluffy texture and prevents clumping.
Avoid stirring the rice while it simmers to maintain proper texture.
Let the dish rest after cooking to finish steaming and soften the rice evenly.
