Description
A rich and savory Burger with Taleggio Pancetta and Onion Mustard Relish made with juicy ground beef patties creamy vegetarian rennet cheese crisp beef bacon and a sweet tangy onion mustard relish layered on soft brioche buns for an indulgent and flavorful meal.
Ingredients
2 pounds freshly ground beef 80 20 ratio
White vinegar 1 2 cup
Mustard seeds 3 tablespoons
Honey 1 tablespoon
Salt 1 teaspoon
Vegetable oil 1 tablespoon
3 medium onions julienned
1 4 cup beef or chicken stock
8 very thin slices Wellshire Beef Bacon or Applegate Uncured Turkey Bacon
Ground black pepper to taste
4 brioche rolls such as Sara Lee Artesano Brioche St Pierre Brioche Burger Buns or Nature’s Own Brioche Style
4 ounces Tillamook Havarti or Cabot Creamery Alpine Jack sliced
1 beefsteak tomato sliced
1 head Bibb lettuce leaves separated
Instructions
1. Preheat the oven to 350 degrees F and set the grill to high heat then form the ground beef into patties about three quarters of an inch thick and keep them chilled until grilling.
2. Combine water vinegar mustard seeds honey and salt in a saucepan and simmer until reduced to a creamy texture.
3. Heat oil in a skillet and cook the onions until caramelized then add stock and cook until the pan is dry before mixing with the mustard seed reduction.
4. Lay slices of beef bacon on a baking sheet and bake until crisp and golden.
5. Season patties with salt and pepper and grill on each side until medium rare then toast brioche buns.
6. Place cheese slices over patties and melt them by closing the grill lid for a short time.
7. Assemble burgers with patties relish crisp beef bacon tomato slices and Bibb lettuce.
Notes
Avoid pressing the patties while grilling to maintain their juiciness.
Caramelize onions slowly to develop full sweetness and depth for the relish.
Cold cheese slices melt more evenly and create a smooth creamy layer.
Choose soft brioche style buns for the best contrast with the savory toppings.
