Description
A moist and rich brown sugar walnut bread made with ripe bananas, soft butter, warm vanilla flavor, and crunchy walnuts. Perfect texture with simple steps.
Ingredients
½ cup butter softened
1 cup brown sugar
2 eggs
1 tablespoon alcohol free vanilla flavor such as Alcohol Free Simply Organic or Watkins Clear Vanilla Flavor
4 very ripe bananas mashed
2 cups all purpose flour
3 teaspoons baking powder
½ teaspoon salt
½ cup chopped walnuts

2. Preheat oven to 350 degrees Fahrenheit and lightly grease a 9 by 5 inch loaf pan.
3. Cream the butter and brown sugar until light and fluffy.
4. Add the eggs one at a time mixing thoroughly after each addition.
5. Stir in the alcohol free vanilla flavor and mashed bananas until smooth.
6. In a separate bowl sift together the flour baking powder and salt.
7. Blend the dry ingredients into the banana mixture and stir gently just until combined.
8. Fold in the chopped walnuts without overmixing.
9. Pour the batter into the prepared loaf pan and level the top.
10. Bake for about one hour or until a toothpick inserted in the center comes out clean.

Use very ripe bananas for the best sweetness and texture.
Do not overmix the batter to keep the crumb soft and moist.
Check the bread around the 50 minute mark if your oven runs hot.
Toast the walnuts lightly before adding them for a deeper nutty flavor.
Allow the loaf to cool completely before slicing for clean even pieces.
