A soft and comforting Brown Sugar Maple Bread Pudding made with simple pantry ingredients. This recipe creates a warm, tender texture with a rich brown sugar and maple flavor.
Ingredients
2 cups light brown sugar, packed
4 cups all purpose flour
2 tablespoons baking powder
1 teaspoon salt
2 large eggs
2 cups milk
⅔ cup vegetable oil
Optional toppings: sugar or chopped nuts

2. Preheat oven to 350°F and lightly grease six miniature loaf pans.
3. In a medium bowl combine brown sugar, flour, baking powder, and salt.
4. In a separate large bowl or stand mixer blend eggs, milk, and vegetable oil until smooth.
5. Gradually add the dry mixture to the wet ingredients and mix until just combined.
6. Pour batter into loaf pans leaving an inch of space at the top for rising.
7. Sprinkle sugar or chopped nuts on top if desired.
8. Bake for about 40 minutes until a toothpick inserted in the center comes out clean.

Notes
You can use white sugar instead of brown sugar.
Any milk works, including almond milk for a dairy free version.
Canola oil or melted butter may replace vegetable oil.
Add walnuts, pecans, almonds, fruits, chocolate chips, oats, or cinnamon for variations.
Make larger loaves by using two one pound pans and baking 50 to 60 minutes.
Make muffins by filling miniature muffin tins two thirds full and baking 12 minutes.
Store at room temperature up to 5 days, refrigerate up to 1 week, or freeze up to 3 months.
