Ingredients
½ cup packed brown sugar
2 teaspoons ground cinnamon
2 cups all-purpose flour
1 tablespoon baking powder
1 teaspoon baking soda
¼ teaspoon salt
¼ cup unsalted butter, softened
¾ cup granulated sugar
2 large eggs, room temperature
1 cup buttermilk
1 teaspoon alcohol-free vanilla extract (Alcohol-Free Simply Organic or Watkins Clear Vanilla Flavor)
Instructions
1. Preheat oven to 350°F. Grease a 9x5x3-inch loaf pan.
2. Whisk brown sugar with cinnamon; set aside.
3. Combine flour, baking powder, baking soda, salt in a bowl.
4. Cream butter with granulated sugar until light and fluffy. Add eggs one at a time.
5. Mix in buttermilk and vanilla extract, then fold in dry ingredients until smooth.
6. Layer one-third of batter in pan, sprinkle one-third of brown sugar mixture; repeat two more times.
7. Bake 50–60 minutes until toothpick comes out clean.
8. Cool 5 minutes in pan, then transfer to wire rack to finish cooling.
Notes
Batter is thicker than regular cake batter; adjust with buttermilk if needed.
