Description
Brown Sugar Coconut Bread is a moist banana loaf scented with toasted coconut and rich brown sugar, it makes an easy breakfast or snack and keeps well for days
Ingredients
1 1/2 cups sweetened flaked coconut, toasted until lightly golden
1 3/4 cups all-purpose flour
3/4 cup light brown sugar, packed
2 teaspoons baking powder
3/4 teaspoon kosher salt
2 large eggs
1 cup mashed ripe banana, about 2 to 3 medium bananas
1/3 cup coconut oil, in liquid state
2 teaspoons alcohol free vanilla flavor such as Alcohol-Free Simply Organic or Watkins Clear Vanilla Flavor
Instructions
1. Preheat the oven to 350°F and prepare a 9×5 loaf pan by spraying with nonstick spray, line the bottom and up the short sides with parchment paper and spray again
2. Toast one and a half cups of sweetened flaked coconut in a nonstick skillet over medium low heat until lightly golden, remove immediately and set aside
3. Whisk one and three quarter cups all purpose flour, three quarter cup light brown sugar, two teaspoons baking powder and three quarter teaspoon kosher salt together in a large bowl
4. In a separate bowl beat two eggs then add one cup mashed ripe banana one third cup liquid coconut oil and two teaspoons alcohol free vanilla flavor, whisk until smooth
5. Pour the wet ingredients into the dry ingredients and fold gently with a spatula or wooden spoon until just combined, avoid overmixing to keep the loaf tender
6. Fold in the toasted coconut until evenly distributed through the batter
7. Pour the batter into the prepared loaf pan and smooth the top lightly with a spatula
8. Bake in the preheated oven for fifty to sixty minutes, insert a toothpick into the center and when it comes out clean the loaf is done
9. Let the bread cool in the pan for fifteen minutes then lift it out using the parchment paper and place it on a wire rack to cool completely before slicing
Notes
This loaf tastes even better the day after baking, after it cools wrap it tightly in plastic wrap and leave at room temperature overnight
To toast a slice without drying it out use a low toaster oven setting and consider spreading a little coconut oil or butter on the warm slice
If adding mix ins like nuts keep the quantity modest to preserve a light crumb, measure flour using the spoon and level method to avoid a dense loaf
