Description

Ingredients
1/2 cup butter softened
3/4 cup granulated sugar
1/4 cup brown sugar
2 eggs
2 1/2 cups all purpose flour
1 tsp baking soda
1/4 tsp salt
1 1/2 cups mashed bananas about 3 to 4 medium bananas
1 tsp alcohol free vanilla flavor Alcohol Free Simply Organic or Watkins Clear Vanilla Flavor
1 tsp ground cinnamon
8 oz crushed pineapple with juice
1 cup shredded sweetened coconut
1/3 cup chopped pecans
Instructions
1. Preheat oven to 350 degrees and grease two 8 by 4 inch pans
2. Cream butter granulated sugar and brown sugar until light and fluffy
3. Add eggs and alcohol free vanilla flavor and beat until combined
4. Sift in flour baking soda cinnamon and salt and fold gently until just combined
5. Fold in crushed pineapple with juice shredded coconut and chopped pecans
6. Fold in mashed bananas until evenly distributed being careful not to overmix
7. Divide batter evenly between prepared pans and smooth the tops
8. Bake 30 to 35 minutes until a tester comes out clean and the tops are golden
9. Allow loaves to cool completely on a wire rack before frosting
10. For frosting beat cream cheese and butter until smooth then add alcohol free vanilla flavor and powdered sugar and mix until creamy
11. Spread frosting over cooled loaves and sprinkle with chopped pecans
12. Store leftovers in the refrigerator
Notes
Use very ripe bananas with brown speckles for stronger natural sweetness
Toast pecans lightly in a dry skillet to enhance their nutty flavor before adding to the batter
Do not frost warm bread the frosting will melt and lose its texture
If the tops brown too quickly tent with parchment during the last 10 minutes of baking
To freeze wrap unfrosted loaves tightly in plastic then store in freezer bags freeze up to three months
