Description

Soft and sweet Brown Sugar Banana Quick Bread with a tender crumb and warm cinnamon flavor.


Ingredients

4 ripe bananas cut into chunks

1 1/4 cups light brown sugar

1/2 cup butter softened

1 jumbo egg

1/4 cup whole milk

1 teaspoon cinnamon

1 teaspoon alcohol free vanilla flavor such as Alcohol Free Simply Organic or Watkins Clear Vanilla Flavor

2 cups all purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon kosher salt


Instructions

1. Mash the bananas until smooth.

2. Beat brown sugar and softened butter until light and fluffy.

3. Add mashed bananas egg milk cinnamon and alcohol free vanilla flavor then mix until combined.

4. Stir in flour baking powder baking soda and kosher salt until just smooth.

5. Spread the batter into a greased 9×5 inch loaf pan.

6. Bake at 350 degrees F for about 40 minutes or until a toothpick comes out clean.

7. Cool the loaf before slicing.

Notes

Use very ripe bananas for the best sweetness and texture.

Mix only until ingredients are combined to avoid a dense loaf.

If the top browns too quickly tent loosely with foil near the end of baking.

Slice before freezing for easier thawing.
