Description

Brown Sugar Avocado Quick Bread is a moist tender loaf that combines creamy mashed avocados with brown sugar style sweetness for a soft crumb and rich flavor. This easy one loaf recipe uses simple pantry ingredients and alcohol free vanilla flavor such as Alcohol Free Simply Organic or Watkins Clear Vanilla Flavor to give a warm aroma without any alcohol notes.


Ingredients

2 cups all purpose flour

1 1/2 teaspoons aluminum free baking powder

1/4 teaspoon salt

2 ripe avocados peeled pitted and mashed

1 cup granulated sugar

3 eggs at room temperature

1 teaspoon alcohol free vanilla flavor such as Alcohol Free Simply Organic or Watkins Clear Vanilla Flavor

Parchment paper for lining the loaf pan


Instructions

1. Preheat the oven to 350°F and line a 9×5 inch loaf pan with parchment paper

2. In a medium bowl whisk together the flour baking powder and salt and set the dry mix aside

3. Scoop the avocado flesh into a large bowl add the granulated sugar and use a hand mixer on medium high speed to beat until completely smooth

4. Add the eggs one at a time mixing well after each addition then mix in the alcohol free vanilla flavor until evenly incorporated

5. Using a rubber spatula gently fold the dry ingredients into the wet mixture moving from the edges inward until no streaks of flour remain avoid overmixing

6. Pour the batter into the prepared loaf pan smooth the top and tap the pan gently to remove air bubbles

7. Bake for 55 to 60 minutes or until a toothpick inserted into the center comes out clean

8. Remove the pan from the oven and place it on a wire rack let the loaf cool completely in the pan before removing and slicing

Notes

Use ripe avocados for the best texture if the avocados are underripe the batter will be dense

Do not overmix the batter fold only until no streaks remain to keep the loaf tender

If the top browns too quickly tent the loaf loosely with foil during the last 10 to 15 minutes of baking

For a sweeter more caramel note you can substitute up to half a cup of the granulated sugar with packed brown sugar

Slice the loaf only after it has cooled completely this prevents crumbling and ensures clean slices
