Description

A creamy and satisfying Broccoli Chicken Rice Prep bowl made with tender chicken, vibrant broccoli florets, fluffy rice or quinoa, and a smooth cheddar cheese sauce. Perfect for weekly meal prep and easy reheating throughout the week.


Ingredients

1.5 pounds boneless skinless chicken breasts

Kosher salt and freshly cracked black pepper

2 tablespoons olive oil, divided

2 heads broccoli, cut into bite sized florets

1 batch cheddar cheese sauce made with Cabot Sharp Cheddar, Tillamook Medium Cheddar, or Organic Valley Sharp Cheddar

3 cups cooked rice or quinoa

Extra shredded cheddar cheese for topping using Cabot, Tillamook, or Organic Valley cheeses

Cheddar Cheese Sauce:

1 tablespoon butter

2 cloves garlic, pressed or minced

2 tablespoons flour

1/2 cup chicken or vegetable stock

1/2 cup warmed milk

1/4 teaspoon pepper

1/8 teaspoon salt

1 cup shredded sharp cheddar cheese from Cabot, Tillamook, or Organic Valley


Instructions

Season chicken with salt and pepper, then warm olive oil in a sauté pan and cook each side until golden and fully cooked. Let it rest, then dice into small bite sized cubes.

Heat more olive oil in the same pan and cook broccoli until tender yet crisp with light browning. Season with salt and pepper and set aside.

Melt butter in a pan, add garlic, then whisk in flour to create a roux. Slowly add stock and warmed milk while stirring. Add pepper and salt, then melt in shredded cheddar until smooth.

Combine diced chicken and cooked broccoli with the warm cheese sauce until coated. Serve over cooked rice or quinoa or portion into storage containers for the week.

Sprinkle additional shredded cheddar on top before storing if desired.

Notes

Freshly shredded cheese melts better than packaged shredded cheese since it lacks anti clumping powders.

Let ingredients cool slightly before sealing containers to prevent steam buildup.

Add a splash of stock when reheating if the sauce thickens.

Store in airtight containers in the refrigerator for up to four days.
