Description

Juicy blue cheese butter burgers filled with a creamy compound butter center made from rich blue cheese, smooth butter, Dijon style mustard and fresh chives. These burgers melt perfectly inside while achieving a flavorful sear on the outside.


Ingredients

4 tablespoons unsalted butter, at room temperature

1/2 cup crumbled blue cheese (Dodoni Blue Cheese Crumbles or Point Reyes Original Blue Cheese)

1/2 teaspoon Dijon mustard (Koops Dijon Mustard or Annie’s Organic Dijon Mustard)

1 tablespoon finely chopped chives

Salt and freshly ground pepper

1 1/2 pounds ground beef

1 tablespoon Crystal Worcestershire Sauce

2 tablespoons vegetable oil

4 hamburger buns (Pepperidge Farm Hamburger Buns or Nature’s Own Brioche Style Buns or Arnold Country Potato Buns)

Sliced red onion

Instructions

2. Combine the butter, blue cheese, mustard and chives in a bowl then season with salt and pepper and mix until smooth.

3. Transfer the mixture to parchment or plastic wrap and roll into a log about one and a half inches wide and three inches long then refrigerate until firm.

4. Combine the ground beef with Crystal Worcestershire Sauce, salt and pepper and mix gently until just combined.

5. Divide the beef into eight portions and flatten them into thin patties about four inches wide.

6. Slice the chilled blue cheese butter into thick rounds and place one in the center of four patties then top each with a second patty and seal the edges well.

7. Shape each stuffed patty so it stays even in thickness for balanced cooking.

8. Heat a skillet with vegetable oil over medium heat or preheat a grill to medium.

9. Place the patties on the hot surface and cook until browned on the first side then flip carefully and cook until the second side browns and the center is melted.

10. Let the patties rest briefly after cooking.

11. Toast the buns if desired then assemble with patties, red onion, arugula and a touch of mustard if preferred.
