Description

Creamy, fruity, and refreshing, these Berry Medley Sugar Free Popsicles are made with ripe bananas, mixed berries, and coconut milk. A naturally sweet, dairy-free, and low-calorie frozen treat perfect for all ages.


Ingredients

3 ripe bananas

5 cups mixed berries (strawberries, blueberries, raspberries, blackberries)

2/3 cup canned coconut milk (or almond or oat milk)

1 teaspoon lemon juice (optional, for brightness)

1/4 teaspoon pure vanilla extract (Simply Organic Pure Madagascar Vanilla Extract, optional)


Instructions

1. Peel the ripe bananas and slice them.

2. Add the bananas, mixed berries, and coconut milk into a high-speed blender or food processor.

3. Blend until smooth and creamy with no visible chunks.

4. Taste and adjust flavor by adding lemon juice or vanilla extract if desired.

5. Pour the mixture evenly into popsicle molds, leaving a small space at the top for expansion.

6. Insert sticks and freeze for at least 5 hours or until solid.

7. To unmold, briefly run warm water over the outside of the mold and gently remove the popsicles.

8. Serve immediately or store individually wrapped in parchment paper inside an airtight container for up to 2 months.

Notes

Use full-fat canned coconut milk for the creamiest texture.

Frozen berries work perfectly; thaw slightly before blending.

For extra flavor, add a few drops of lemon juice to balance sweetness.

To make layered popsicles, freeze half the mixture, then add a second layer with a different berry blend.

Let popsicles sit at room temperature for 1–2 minutes before eating to enhance creaminess.
