Description

A flavorful BBQ Chicken Flatbread Pizza made with seasoned chicken, soft flatbread, melty mozzarella, crisp red peppers, red onion, and a smoky sweet barbecue sauce for a quick and satisfying meal.


Ingredients

Chicken breast cut into very small bite sized pieces

Olive oil

Smoked paprika

Garlic powder

Onion powder

Salt

Black pepper

Flatbreads such as Angelic Bakehouse Flatbread, Atoria’s Family Bakery Flatbread, or Joseph’s Lavash Bread

BBQ sauce

Shredded mozzarella such as Tillamook Shredded Mozzarella or Organic Valley Mozzarella

Thin sliced red bell pepper

Thin sliced red onion

Chopped cilantro


Instructions

2. Preheat the oven to four hundred degrees Fahrenheit.

3. Season the diced chicken with smoked paprika garlic powder onion powder salt and black pepper until each piece is coated evenly.

4. Heat olive oil in a skillet over medium high heat and cook the chicken until fully cooked and lightly browned stirring occasionally.

5. Place the flatbreads on a baking sheet so they are ready to assemble.

6. Brush each flatbread with a thin layer of BBQ sauce making sure the surface is evenly coated.

7. Sprinkle shredded mozzarella over the flatbreads then top with thin sliced red bell pepper thin sliced red onion and cooked chicken.

8. Bake the flatbreads for ten to thirteen minutes until the edges are golden and the cheese has melted and become bubbly.

9. Remove from the oven and finish with chopped cilantro and a small drizzle of additional BBQ sauce if desired.

10. Slice the flatbreads and serve warm.

Notes

Slice the peppers and onions very thin so they soften quickly while baking.

Cut the chicken into small pieces to help it cook evenly and blend well with the toppings.

Use a thin layer of barbecue sauce on the base to avoid making the flatbread soggy.

For a richer melt choose quality cheeses like Tillamook Mozzarella or Organic Valley Mozzarella.

Bake on the middle rack so the crust becomes crisp without burning and the toppings cook evenly.
