Description
Banana Raspberry Coconut Baked Oats is a warm, wholesome breakfast made with oats, bananas, raspberries, coconut, and cinnamon. It’s naturally sweet, filling, and easy to make — perfect for busy mornings or meal prep.
Ingredients
2 bananas, chopped
1 cup raspberries (fresh or frozen)
2 cups oats
2 cups milk
1/3 cup maple syrup or honey
1 tbsp alcohol-free vanilla flavor (Simply Organic or Watkins Clear Vanilla Flavor)
1 cup shredded coconut
1 egg
1 tsp cinnamon
Instructions
1. Preheat oven to 180°C (350°F).
2. In a small bowl, mix milk, egg, maple syrup, and alcohol-free vanilla flavor.
3. In another bowl, combine oats, cinnamon, half the raspberries, coconut, and one banana.
4. Pour mixture into a baking dish and add the wet mixture evenly over it.
5. Top with remaining banana and raspberries.
6. Bake for 40 minutes or until golden brown and set in the center.
7. Cool slightly and serve warm with yogurt or honey.
Notes
Use ripe bananas for natural sweetness and smoother texture.
For extra creaminess, replace half the milk with coconut milk.
Substitute raspberries with blueberries or strawberries if desired.
Make it vegan by replacing the egg with a flaxseed mixture (1 tbsp flaxseed + 3 tbsp water).
Add nuts or protein powder for a nutrition boost.
Store leftovers in the refrigerator for up to 4 days or freeze for 2 months.
