Ingredients
Half of a medium ripe banana, mashed until smooth
One tablespoon coconut flour
One tablespoon almond butter or any smooth nut or seed butter
Two to three tablespoons milk, dairy or plant based
Optional dairy free chocolate chips
Optional pinch of cinnamon or nutmeg
Optional alcohol free vanilla flavor such as Simply Organic Alcohol Free Vanilla Flavor or Watkins Clear Vanilla Flavor
Instructions
Lightly grease a microwave safe mug or small bowl with butter or coconut oil
Mash the banana in a small mixing bowl until completely smooth
Add the coconut flour and mix thoroughly until no dry spots remain
Stir in the almond butter until the mixture is glossy and well combined
Add the milk gradually while stirring until a thick but pourable batter forms
Fold in chocolate chips or spices if using
Pour the batter into the prepared mug, filling it no more than three quarters full
Microwave on high until the cake is set and springy on top
Let the mug cake rest briefly before enjoying
For oven preparation, bake the batter in a greased ramekin at three hundred fifty degrees Fahrenheit until just set
Notes
Use very ripe bananas for the best sweetness and texture
Coconut flour absorbs liquid quickly, so adjust milk as needed
Nut butters should be creamy and well stirred before measuring
Microwave power levels vary, so cook just until set to avoid dryness
This recipe is best enjoyed fresh and warm
Leftovers can be stored covered in the refrigerator for up to one day and reheated briefly
