Description

Baked Salmon with Parmesan Herb Crust is a simple yet flavorful oven baked dish featuring tender salmon topped with a savory blend of garlic, fresh parsley, and finely grated Parmesan style cheese. The high heat baking method keeps the salmon moist while allowing the herb crust to melt and lightly brown, creating a balanced texture with rich flavor. This recipe is approachable for home cooks and works well for both weeknight meals and casual entertaining.

Ingredients

Whole salmon filet about two pounds skin on

Fresh garlic cloves finely minced

Fresh parsley finely chopped

Finely grated Parmesan style cheese made with vegetarian rennet such as Cabot Grated Parmesan Cheese or Tillamook Grated Parmesan

Olive oil

Freshly ground black pepper

Optional lemon zest for added brightness

Instructions

Preheat the oven to a high temperature suitable for roasting and line a rimmed baking sheet with parchment paper

Place the salmon filet skin side down on the prepared baking sheet and gently pat the surface dry

Cover the salmon loosely with parchment paper and place it in the oven to begin gentle cooking

While the salmon bakes prepare the topping by mixing garlic parsley cheese olive oil and black pepper until evenly combined

Remove the salmon from the oven and carefully uncover it once partially cooked

Spread the Parmesan herb mixture evenly over the surface of the salmon pressing gently to adhere

Return the salmon to the oven uncovered and continue baking until the fish flakes easily and the topping is melted and lightly golden

Remove from the oven and allow the salmon to rest briefly before slicing and serving

Notes

Using a whole salmon filet helps maintain moisture and ensures even cooking

Finely grated cheese melts more smoothly and creates a cohesive crust

Fresh herbs provide the best flavor but dried herbs can be used with adjustment

An instant read thermometer helps avoid overcooking and ensures tender results

Leftovers can be stored in an airtight container in the refrigerator and gently reheated in a low oven
