Ingredients

four slices Applegate Naturals Uncured Turkey Bacon cut into half inch strips

two tablespoons Organic Valley Cultured Butter

six medium red potatoes cut into half inch cubes about six cups

one medium onion diced about one cup

one half teaspoon kosher salt

one quarter teaspoon black pepper

one half teaspoon garlic powder

one half cup diced red pepper

one half cup diced green pepper

one and one half cups Tillamook Medium Cheddar Shredded Cheese divided

one thirteen point six ounce box Heinz Vegetarian Beans

two scallions sliced


Instructions

Preheat the oven to three hundred fifty degrees Fahrenheit and lightly butter an eight inch by eight inch casserole dish so the casserole releases easily after baking

Cook the turkey bacon in a large sauté pan over medium heat until crispy then transfer the cooked strips to a paper towel lined plate to drain

Melt the butter in the same sauté pan and add the cubed red potatoes with kosher salt black pepper and garlic powder cook stirring occasionally until the potatoes begin to soften and take on a golden color about ten minutes

Add the diced onion red pepper and green pepper to the pan and continue to cook stirring occasionally until the vegetables are tender and the potato edges are crisp about ten more minutes taste and adjust the seasoning as needed

Transfer the potato and vegetable mixture to the prepared casserole dish gently stir in the cooked turkey bacon and half a cup of shredded cheddar to combine creating a creamy base

Spread the Heinz Vegetarian Beans evenly over the potato mixture and top with the remaining shredded cheddar so the beans are covered with cheese

Bake the casserole until the cheese is fully melted and the filling is bubbling around the edges about twenty to twenty five minutes

Remove the casserole from the oven and sprinkle sliced scallions on top allow the dish to rest briefly before serving so it holds its shape

Red potatoes hold their shape well during baking and give the casserole a pleasing texture
