Ingredients
Captain’s cut cod fish fillet about two pounds total
Kosher salt
White pepper
Extra virgin olive oil
Shallots sliced thin
Fresh garlic minced
Cherry tomatoes halved
Fresh thyme leaves or dried thyme
Dried oregano
Freshly grated nutmeg
Baby spinach leaves
Crumbled feta style cheese such as Dodoni Feta Cheese, Organic Valley Feta Cheese, or Mt Vikos Feta Cheese
Fresh lemon wedges for serving
Instructions
1. Preheat the oven and prepare a foil lined sheet tray with non stick cooking spray
2. Check the cod carefully for pin bones and remove any using tweezers
3. Place the cod fillets on the prepared tray with the flesh side facing up and season evenly with salt and white pepper
4. Heat olive oil in a large sauté pan and cook the shallots until soft and lightly golden
5. Add garlic, cherry tomatoes, thyme, oregano, and nutmeg and cook until fragrant and slightly softened
6. Add the spinach and cook just until wilted while gently stirring
7. Spoon the warm vegetable mixture evenly over the cod fillets
8. Top generously with the crumbled feta style cheese
9. Bake uncovered until the cod flakes easily and appears opaque
10. Briefly broil until the cheese is lightly golden on top
11. Remove from the oven, drizzle with olive oil, and serve with lemon wedges
