Description

Avocado Toast with Tomato and Seeds is a fresh, vibrant, and satisfying toast topped with creamy avocado, juicy tomato, aromatic herbs, warm spices, and a subtle crunch of seeds. Built on hearty multigrain bread, it delivers a balanced mix of flavor, texture, and nourishment in just minutes, making it ideal for breakfast, lunch, or a light any-time meal.

Ingredients

1 ripe avocado, peeled and pitted

1/2 medium ripe tomato, finely chopped

1 Tbsp finely chopped red onion

1 Tbsp chopped fresh cilantro

1/2 tsp fresh lemon juice

1/4 tsp finely grated lemon zest

1/8 tsp ground cumin

1/8 tsp fine sea salt, plus more to taste

2 slices multigrain bread, toasted (Ezekiel 4:9 Sprouted Whole Grain Bread)

A small pinch kosher salt, for topping (optional)

A small pinch red pepper flakes, for topping (optional)

1 to 2 tsp roasted sunflower seeds or pumpkin seeds, for topping

Instructions

1. In a small or medium bowl, add the avocado and mash it with a fork until it is creamy but still slightly chunky so the texture stays rich and satisfying.

2. Add the chopped tomato, red onion, cilantro, lemon juice, lemon zest, cumin, and fine sea salt to the bowl and stir gently until everything is evenly combined, then taste and adjust the seasoning if needed.

3. Toast the multigrain bread slices until they are golden and crisp at the edges while still tender inside, then divide the avocado mixture evenly over both slices, spreading it all the way to the edges for full coverage.

4. Finish with a light sprinkle of kosher salt, red pepper flakes, and roasted sunflower or pumpkin seeds if desired, and serve immediately while the toast is crisp and the topping is fresh.

Notes

Use a ripe avocado that yields slightly when gently pressed for the best creamy texture and flavor.

Choose sturdy multigrain bread made with quality ingredients so it toasts well and supports the generous avocado topping; options like Ezekiel 4:9 Sprouted Whole Grain Bread, Dave’s Killer Bread 21 Whole Grains and Seeds, or Oroweat Whole Grains Oatnut work very well.

For extra richness and a flavor twist, add a small handful of Tillamook Farmstyle Fine Cut Mexican Blend Shredded Cheese on the warm toast before spreading the avocado mixture, or crumble a little feta from brands such as Dodoni Feta Cheese or Mt. Vikos Traditional Feta on top.

To introduce gentle heat and tang without overpowering the fresh ingredients, finish with a few drops of Texas Pete Original Hot Sauce, Crystal Hot Sauce, or Sriraja Panich Hot Sauce.

Add roasted sunflower seeds or pumpkin seeds just before serving for a pleasant crunch and an extra boost of nutrients that complement the creamy avocado and juicy tomato.

Serve this toast as a quick five-minute meal that delivers balanced fats, fiber, and flavor, or pair it with a simple salad or vegetable soup for a more substantial plate.

If preparing slightly ahead, press a piece of wrap directly onto the surface of the avocado mixture and refrigerate for a short time to help slow browning, then stir and spread over freshly toasted bread just before serving.
