Apricot Bliss Balls are an easy no bake snack made with dried apricots Medjool dates oats and coconut. These soft chewy bites are naturally sweet satisfying and perfect for quick snacks meal prep or a light dessert. With simple pantry ingredients and minimal preparation they are a great option for busy days and wholesome eating.
Ingredients
Dried apricots soft and naturally sweet
Medjool dates pitted and at room temperature
Rolled oats old fashioned or quick oats
Desiccated coconut plus extra for coating
Coconut oil gently melted
Tap water as needed for binding
Instructions
1. Prepare all ingredients and make sure dates are pitted and soft
2. Add dried apricots to the food processor and pulse until chopped
3. Add Medjool dates and pulse until sticky and combined
4. Add rolled oats and desiccated coconut then pulse to mix evenly
5. Pour in melted coconut oil and add water then pulse until the mixture holds together when pressed
6. Transfer mixture to a bowl and scoop small portions
7. Roll each portion between your palms to form smooth balls
8. Roll the balls in extra desiccated coconut to coat
9. Place in the refrigerator and chill until firm before serving
Notes
Use high quality dried apricots for the best flavor and texture
Medjool dates are preferred because they are soft juicy and less fibrous
If the mixture feels too dry add a small amount of water
If the mixture feels too wet add a little more oats
Peanut butter or almond butter can be used instead of coconut oil and water for a nutty flavor
Store in an airtight container in the refrigerator for up to seven days
