Description

Soft and chewy Apple Oatmeal Breakfast Bars made with oats, applesauce, and cranberries. Perfect for a wholesome, make-ahead breakfast or snack.


Ingredients

2 cups rolled oats

½ cup granulated sugar

1½ teaspoons baking powder

½ teaspoon salt

½ teaspoon cinnamon

2 large eggs

½ cup almond milk

¼ cup unsweetened applesauce

1 teaspoon alcohol-free vanilla flavor (Simply Organic or Watkins Clear Vanilla Flavor)

¼ cup walnuts, finely chopped

¼ cup dried cranberries


Instructions

1. Preheat oven to 350°F and line an 8-inch square baking pan with parchment paper hanging over the sides.

2. In a medium bowl, combine oats, sugar, baking powder, salt, and cinnamon.

3. In another bowl, whisk eggs, almond milk, applesauce, and alcohol-free vanilla flavor.

4. Add dry ingredients to the wet mixture and stir until combined.

5. Let the mixture rest for about 20 minutes to absorb moisture.

6. Fold in the walnuts and dried cranberries.

7. Spread the mixture evenly in the prepared pan.

8. Bake for 25 to 30 minutes until edges are golden brown and center is set.

9. Cool for 5 minutes on a wire rack before slicing into 16 bars.
