Description
Frozen almond butter banana sandwiches dipped in smooth chocolate for a simple and refreshing treat.
Ingredients
3 ripe bananas
1/3 cup almond butter
1/2 cup dark chocolate chips
1 teaspoon coconut oil optional
1 teaspoon chia seeds optional
Instructions
1. Line a baking sheet with parchment paper and set aside.
2. Peel and slice bananas into one quarter inch rounds.
3. Lay half of the slices on the baking sheet and spread almond butter on each.
4. Stir chia seeds into the almond butter if using.
5. Top each with another banana slice to form small sandwiches.
6. Freeze for about one hour until firm.
7. Melt chocolate chips in a microwave safe bowl in twenty second intervals, stirring each time.
8. Add coconut oil to the melted chocolate if desired.
9. Dip each frozen banana sandwich halfway into the chocolate and scrape excess from the bottom.
10. Place dipped bites back on the tray and freeze until chocolate sets.
11. Store in a freezer safe container for one to two months.
Notes
Choose ripe bananas for natural sweetness.
If chocolate thickens while dipping, rewarm it briefly.
Scraping the bottom of each bite prevents chocolate pooling.
Let the bites soften for a minute before eating for a creamier texture.
