Ingredients

Fresh salmon, skin removed and finely minced

Fresh chives, finely chopped

Dried parsley

Fresh garlic, finely minced

Fine sea salt

All purpose flour, plus more if needed

Fresh lemon cut into wedges

Olive oil cooking spray

Full fat mayonnaise

Fresh lemon juice

Cajun seasoning


Instructions

Prepare the aioli dipping sauce by stirring the mayonnaise, minced garlic, lemon juice, and Cajun seasoning until smooth, then refrigerate to allow the flavors to blend

Finely mince the fresh salmon until it has a coarse but cohesive texture and transfer it to a large mixing bowl

Add the chives, parsley, garlic, and salt to the salmon and gently mix until evenly combined

Sprinkle the flour over the mixture and fold gently until the mixture holds together, adding a little more flour if it feels too wet

Divide the mixture evenly and shape into firm patties about one inch thick

Preheat the air fryer and place the lemon wedges in the basket to add moisture and aroma

Arrange the salmon patties on top of the lemon wedges, leaving space between each one

Lightly spray the patties with olive oil cooking spray

Cook at a lower temperature until the patties are cooked through, flipping carefully halfway and spraying again for even browning
