Ingredients
For Chicken
Boneless skinless chicken thighs or sliced chicken breast
Straus Organic Greek Yogurt or Fage Better Days Alcohol Free Greek Yogurt
Juice of half a lemon
Dried oregano
Garlic powder
Salt
Ground black pepper
For Tomato Cucumber Salad
Roma or campari tomatoes diced
English or Persian cucumber diced
Thinly sliced red onion
Olive oil
Apple cider vinegar
Salt
Pepper
Dodoni Feta Cheese or Athenos Traditional Feta
For Couscous
Moroccan couscous
Boiling water
Instructions
Mix yogurt lemon juice oregano garlic powder salt and pepper until smooth then coat the chicken and let it marinate
Combine tomatoes cucumber and red onion then add olive oil and apple cider vinegar with salt and pepper and let it rest
Place couscous in a heat safe bowl pour boiling water over it cover and fluff after it softens
Preheat the air fryer place the chicken inside and cook until the internal temperature reaches safe doneness
Assemble bowls with couscous salad sliced chicken and crumbled feta on top
Notes
Chicken breast cooks faster when sliced thin while thighs stay juicy when cooked slightly longer
