Description

This vegan apple tart recipe features a crisp pastry crust, a creamy almond frangipane filling, and tender, beautifully arranged apple slices. It’s a show-stopping, dairy-free dessert perfect for holidays, dinner parties, or cozy nights in.


Ingredients

Tart Crust:

1 Tart Crust Recipe (see notes for options)

12 tbsp apple or apricot jam (optional)

Vegan Frangipane:

1 1/4 cups ground blanched almonds (125g)

1/2 cup all-purpose flour (60g) or gluten-free alternative

1 tbsp cornstarch or arrowroot/tapioca starch

1 tsp baking powder

6 tbsp vegan butter (85g, softened) or coconut oil

1/3 cup + 1 tbsp caster sugar (85g)

1/3 cup unsweetened apple sauce (85g)

3 tbsp almond milk or other non-dairy milk

1/2 tsp almond extract (optional)

3/4 tsp vanilla extract (optional)

34 small apples, thinly sliced

Topping:

1 handful sliced almonds

2 tbsp brown sugar


Instructions

1. Prepare the pastry crust and press it into a 10-inch tart pan. Preheat oven to 400°F (200°C).

2. Line crust with parchment and weights. Bake 10 minutes. Remove weights and bake 10 more minutes. Let cool slightly.

3. (Optionally) Spread a thin layer of apple or apricot jam on the base.

4. Reduce oven temperature to 355°F (180°C).

5. In a bowl, whisk ground almonds, flour, starch, and baking powder.

6. In another bowl, cream vegan butter and sugar. Add applesauce, milk, and extracts. Mix well.

7. Stir dry mixture into the wet until just combined. Batter will be thick.

8. Spread batter evenly over tart crust.

9. Arrange thin apple slices in a spiral or concentric circles. Top with almonds and sprinkle brown sugar.

10. Bake for about 50 minutes or until a toothpick comes out clean.

11. Let cool fully in the pan before removing.

12. Serve as is or with vegan ice cream, maple syrup, or pecans.

Notes

If you’re short on time, use store-bought pie dough or vegan puff pastry. No need to blind bake puff pastry—just assemble and bake.

To make it gluten-free, use a 1:1 gluten-free flour blend or rice flour.

For a no-crust version, bake just the frangipane and apples in an 8-inch pan to create a simple almond apple cake.

To make homemade blanched almonds, soak and peel regular almonds and grind them.
