Ingredients

1 cup water (240 ml)

1 cup butter (227 g)

3 Tablespoons unsweetened cocoa powder (22.5 g)

2 cups all-purpose flour (240 g)

2 cups granulated sugar (400 g)

1 teaspoon baking soda (5 g)

1/2 teaspoon salt (2.5 g)

1/2 cup sour cream (120 g)

2 large eggs

1 teaspoon vanilla extract (5 ml)

Frosting:

6 Tablespoons milk (90 ml)

3 Tablespoons unsweetened cocoa powder (22.5 g)

1/2 cup butter (115 g)

3 3/4 cups powdered sugar (450 g)


Instructions

1. Preheat oven to 350°F (175°C). Grease an 18×13-inch pan.

2. In a medium saucepan over medium heat, combine water, butter, and cocoa powder. Bring to a boil.

3. In a large bowl, mix flour, sugar, baking soda, and salt.

4. In a separate bowl, whisk sour cream, eggs, and vanilla.

5. Pour the sour cream mixture into the dry ingredients. Mix until combined.

6. Slowly add the hot cocoa mixture to the batter. Stir until smooth.

7. Pour the batter into the prepared pan. Smooth the top evenly.

8. Bake for 15–20 minutes or until a toothpick inserted comes out mostly clean.

9. While the cake bakes, make the frosting. Combine milk, cocoa powder, and butter in a saucepan. Bring to a boil.

10. Remove from heat and stir in powdered sugar. Beat until smooth.

11. Pour hot frosting over the warm cake. Spread quickly and evenly.

12. Let frosting set for 10–15 minutes before serving.

Notes

Store leftovers in an airtight container at room temperature for 2–3 days or refrigerate up to 5 days.

You can freeze this cake for up to 2 months. Thaw at room temperature before serving.

Add chopped pecans to the frosting for a classic Southern twist.
