Description

This no-bake Strawberry Tiramisu recipe is a fruity twist on the classic Italian dessert, made with layers of juicy strawberries, soft ladyfingers, and whipped mascarpone cream. Perfect for summer parties or an easy make-ahead treat.


Ingredients

3 cups fresh strawberries, roughly chopped

⅓ cup granulated sugar

21 ounces strawberry pie filling

2 cups heavy whipping cream

2 teaspoons vanilla extract

¾ cup powdered sugar, sifted

6 tablespoons vanilla instant pudding (a little less than one 3.4 oz box)

16 ounces mascarpone cheese

12 ounces ladyfingers

Fresh strawberries or whipped cream for topping (optional)


Instructions

1. Add the chopped strawberries and granulated sugar to a bowl. Stir well and let sit for 10 minutes, then mash slightly with a fork.

2. Stir in the strawberry pie filling and set aside.

3. In a large bowl or stand mixer, whip the heavy cream and vanilla extract on medium speed for 2-3 minutes until frothy.

4. Add the powdered sugar and pudding mix. Whip for another 3-4 minutes until stiff peaks form.

5. Add half the mascarpone cheese and blend on medium. Then add the other half and continue mixing for 4 minutes until fluffy.

6. Spray a 9×9 inch baking dish with cooking spray.

7. Quickly dip each ladyfinger into the strawberry mixture (1 second per side), and place them in a single layer in the dish.

8. Top with half of the remaining strawberry mixture and spread evenly.

9. Add half the mascarpone cream mixture over the strawberry layer and smooth it out.

10. Repeat the layers: ladyfingers, strawberry mixture, mascarpone cream.

11. Cover and refrigerate for at least 6 hours, preferably overnight.

12. Top with fresh berries or whipped cream before serving, or enjoy it plain.

Notes

You can prepare this dessert a day ahead to let the flavors fully develop.

For a fun twist, try mixing in lemon zest or other berries like blueberries or raspberries.

Do not over-soak the ladyfingers, or the layers may become soggy.
