Description
These buttery, melt-in-your-mouth snowball cookies are coated in powdered sugar and perfect for holidays or year-round treats.
Ingredients
180g unsalted butter, at room temperature
70g powdered sugar, sifted
1/2 tsp vanilla bean paste or vanilla extract
190g all-purpose flour
20g custard powder or cornstarch
1/4 tsp salt (less if using table salt)
Extra powdered sugar for rolling
Instructions
1. Preheat the oven to 165°C / 325°F. Line baking sheet(s) with parchment paper.
2. Cream together the butter, powdered sugar, and vanilla until light and fluffy.
3. Scrape down the bowl and add flour, custard powder (or cornstarch), and salt. Mix to combine.
4. Scoop dough into 18g balls using a 1 Tbsp scoop. Roll into smooth balls.
5. Place on baking sheet, spaced slightly apart. Bake for 15–16 minutes until set but not browned.
6. Cool cookies on pan for 10 minutes.
7. Gently roll warm cookies in powdered sugar and return to the tray.
8. Once cooled, roll cookies again in powdered sugar.
9. Store in an airtight container at room temperature for up to a week.
Notes
If using salted butter, reduce or omit the salt.
Powdered sugar is also known as icing sugar or confectioner’s sugar.
Chilling dough slightly before baking helps reduce spreading.
