Description
A rich and gooey pecan pie muffins recipe that brings all the flavor of a classic pecan pie in an easy, 6-ingredient muffin form.
Ingredients
1 cup packed light brown sugar
½ cup all-purpose flour
2 cups chopped pecans
2/3 cup butter, softened
2 eggs, beaten
Instructions
1. Preheat oven to 350°F. Generously grease muffin cups.
2. In a bowl, mix brown sugar, flour, and pecans.
3. In another bowl, beat butter and eggs until smooth.
4. Stir dry ingredients into wet ingredients just until combined.
5. Spoon batter into muffin cups about 2/3 full.
6. Bake 12–13 mins for mini muffins or 15–17 mins for regular size.
7. Cool for 5 minutes, run a knife around edges, and remove.
Notes
These muffins are very rich and gooey, similar to pecan pie.
Make sure to grease your muffin tin well to prevent sticking.
Store in an airtight container for up to 5 days.
