Description
These rustic Mini Fruit Galettes are made with a flaky crust and juicy fruit filling. Easy to customize and perfect for any occasion, they bake beautifully and taste amazing fresh or frozen.
Ingredients
2 pie crusts (homemade or store-bought, chilled)
2 and 1/2 cups mixed berries or sliced fruit (like strawberries, blackberries, apples, peaches, or plums)
1 Tablespoon cornstarch
2 Tablespoons granulated sugar
1 teaspoon lemon juice or vanilla extract
2 Tablespoons whole milk (for brushing)
Optional: coarse sugar, chopped or sliced nuts
Instructions
1. Make the pie dough ahead and chill for at least 2 hours.
2. Preheat oven to 375°F (191°C) and line two baking sheets with parchment paper.
3. In a bowl, gently mix the berries, cornstarch, sugar, and lemon juice or vanilla. Refrigerate while you shape the crust.
4. Roll out one dough disc into a 12-inch circle. Cut out 5.5 to 6-inch rounds using a bowl or cookie cutter. Re-roll scraps as needed.
5. Repeat with the second dough disc to make 10 rounds total.
6. Place dough rounds on prepared baking sheets. Spoon 1/4 cup of fruit filling in the center of each, leaving the juices behind.
7. Fold the edges of the dough over the filling, leaving the center exposed. Press gently to hold the folds in place.
8. Brush crust edges with milk and optionally sprinkle with coarse sugar or nuts.
9. Chill the assembled galettes on the baking sheets for at least 20 minutes.
10. Bake for 25–28 minutes until the crust is golden brown.
11. Cool for 5 minutes before serving. Serve warm or at room temperature.
12. Store leftovers covered in the refrigerator for up to 5 days.
Notes
Fruit options: Fresh fruit works best, but thawed and dried frozen fruit can be used.
Make-ahead: Assemble and chill up to 4 hours ahead. Fully baked galettes freeze well for up to 3 months.
Reheating: Warm in a 350°F oven for 5–8 minutes. Avoid microwaving to keep the crust crisp.
Half batch: Use 1 crust and half the filling ingredients to make 5 mini galettes.
