Description
This Matcha White Chocolate Tart combines the rich sweetness of white chocolate with the earthy boldness of matcha in a buttery almond shell, topped with vanilla cream.
Ingredients
75g almond meal (¾ cup)
190g plain flour (1½ cups)
30g white sugar (2 tbsp + 1 tsp)
150g unsalted butter, chilled and cubed (⅔ cup)
25g iced water (1 tbsp + 2 tsp)
360g white chocolate, roughly chopped (12.6 oz)
200g thickened or heavy cream (¾ cup + 2 tbsp)
1 tbsp corn syrup or glucose
1 tbsp matcha powder
470g thickened or heavy cream (2 cups)
25g white sugar (2 tbsp)
1 tsp vanilla extract
Instructions
1. Combine almond flour, flour, and sugar. Mix evenly.
2. Rub in cold butter until crumbly.
3. Add iced water and mix to form dough. Do not overwork.
4. Roll out dough and press into a 24cm tart tin. Dock the base.
5. Chill the tart shell for 1 hour.
6. Place the empty crust in a preheated oven at 180°C (355°F) for approximately 35 to 40 minutes. After this initial baking, carefully take out the weights and continue baking the crust for an additional 15 minutes to achieve a golden finish.
7. Cool the tart shell completely.
8. Heat cream just to bubbling. Pour over chocolate and corn syrup.
9. Let sit, then whisk into a ganache.
10. Mix matcha with a bit of ganache, then blend it back into the main batch.
11. Pour into tart shell. Chill until set, about 2 hours.
12. Chill bowl and whisk, then whip cream, sugar, and vanilla to stiff peaks.
13. Top tart with whipped cream and dust with matcha before serving.
Notes
Use culinary-grade matcha for bold flavor and color.
Allow the tart to rest at room temperature for about 10 minutes before cutting into it.
Use a warm knife for clean slices.
