Description
Classic French madeleine cookies with a golden shell, soft center, and buttery citrus flavor.
Ingredients
For Coating the Pan:
1 tablespoon unsalted butter
1 ½ teaspoons all-purpose flour
For Madeleines:
10 tablespoons (141 g) unsalted butter, cut into pieces
2 large eggs, room temperature
½ cup (100 g) granulated sugar
3 tablespoons light brown sugar, firmly packed
2 teaspoons vanilla extract
⅛ teaspoon salt
1 ¼ cups (155 g) all-purpose flour
2 teaspoons lemon or orange zest (optional)
Instructions
1. Preheat oven to 375°F (190°C). Whisk together 1 tablespoon melted butter and 1 ½ teaspoons flour. Use a pastry brush to coat each cavity of your madeleine pan.
2. In a small bowl, melt the remaining 10 tablespoons of butter. Set aside to cool.
3. In a large bowl, whisk eggs, granulated sugar, brown sugar, vanilla extract, and salt for 30 seconds until well combined.
4. Sift in the flour in thirds, folding gently after each addition.
5. Drizzle the cooled melted butter and zest into the batter. Fold gently to combine.
6. Spoon heaping tablespoons of batter into each mold of the prepared pan.
7. Bake on center rack for 9 minutes, or until golden and the tops spring back.
8. Transfer to a wire rack to cool immediately.
9. Repeat with any remaining batter, re-brushing pan if needed.
10. Dust with powdered sugar or dip in melted chocolate if desired.
Notes
Madeleines are best fresh but can be stored in an airtight container at room temperature for up to 3 days.
To freeze, wrap cooled cookies individually and place in a sealed container for up to 2 months.
Do not refrigerate, as this dries them out.
