Description

A joyful, layered dessert in a jar featuring chocolate chip cake, tangy passion fruit curd, crunchy chocolate crumbs, and silky coffee frosting. Perfect for gifting, freezing, or treating yourself.

1/2 cup butter

1 1/4 cups sugar

1/4 cup light brown sugar

3 eggs

1/2 cup buttermilk

1/2 cup canola oil

1 tbsp vanilla extract

1 1/2 cups cake flour

1 tsp baking powder

1 tsp kosher salt

3/4 cup mini chocolate chips

Passion Fruit Curd:

1/2 cup passion fruit purée

1/3 cup sugar

2 eggs

1/2 tsp powdered gelatin

3/4 cup cold butter, cubed

1/2 tsp kosher salt

Chocolate Crumbs:

1/3 cup flour

1/4 cup sugar

1/3 cup cocoa powder

1/2 tsp kosher salt

1/2 tsp cornstarch

3 tbsp melted butter

Coffee Frosting:

1 cup butter (room temperature)

1/2 cup confectioners’ sugar

1/3 cup whole milk

1 1/2 tsp instant espresso powder

1/2 tsp salt


Instructions

  1. Bake Cake: Prepare and bake chocolate chip cake in a 9×13-inch pan. Cool completely.

  2. Make Curd: Blend purée, sugar, and eggs. Heat, then mix in gelatin and butter. Chill.

  3. Prepare Crumbs: Mix dry ingredients, add butter, form clusters, and bake. Cool completely.

  4. Make Frosting: Whip butter and sugar, slowly add coffee milk, beat until fluffy and glossy.

  5. Assemble Jars: Layer cake, curd, crumbs, frosting. Repeat.

  6. Freeze: Cover and freeze for at least 12 hours. Thaw before serving.
