Description

These soft and chewy cake mix cookies are made with just 3 ingredients and endless flavor options. A quick, fun treat for all occasions.


Ingredients

1 (15.25-ounce/432g) box cake mix

½ cup vegetable oil

2 large eggs

½ to 1 cup mix-ins (chocolate chips, sprinkles, M&Ms, optional)


Instructions

1. Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.

2. In a large bowl, combine cake mix, oil, and eggs until fully combined.

3. Fold in any optional mix-ins such as chocolate chips or sprinkles.

4. Scoop dough into 2-tablespoon-sized balls and space them 2 inches apart on the sheets.

5. Bake for 10 to 12 minutes, or until the centers appear dry.

6. Let cool on baking sheet for 3 minutes before transferring to a wire rack to cool completely.

Notes

Use any flavor of cake mix: chocolate, vanilla, red velvet, lemon, etc.

Let eggs come to room temperature for easier mixing.

Reduce oil to ⅓ cup if using confetti or sprinkle cake mixes.

Use a cookie scoop for uniform size and shape.

Shape cookies with a round cutter after baking for a bakery-style finish.
