Description
These cherry cookies are soft, chewy, and bursting with fresh cherry flavor, perfectly balanced with melty chocolate chips and a hint of cinnamon. Ideal for every occasion, from holidays to everyday snacking.
Ingredients
½ cup butter, softened
½ cup white sugar
½ cup brown sugar
1 tsp pure vanilla extract
1 egg
1½ cups all-purpose flour
½ tsp baking soda
¼ tsp baking powder
½ tsp sea salt
¼ tsp cinnamon
1 cup chocolate chips
1 cup cherries, pitted and chopped
Instructions
1. Pit and chop the cherries, then press between paper towels to remove excess moisture.
2. Preheat oven to 375°F. Line baking sheets with parchment paper or a silicone mat.
3. In a medium bowl, whisk flour, baking soda, baking powder, salt, and cinnamon. Set aside.
4. In a mixing bowl, beat the butter, white sugar, and brown sugar until light and fluffy.
5. Add the egg and vanilla extract, and beat until combined.
6. Add dry ingredients and mix until fully incorporated.
7. Stir in the chocolate chips until evenly distributed.
8. Gently fold in the chopped cherries.
9. Scoop the dough using a 1½ to 2 tablespoon cookie scoop and place onto baking sheets.
10. Bake for 10–13 minutes until tops are just set and edges are lightly golden.
11. Let cookies cool on the baking sheet for 5–10 minutes, then transfer to a wire rack to cool completely.
Notes
Make sure to dry cherries thoroughly to avoid soggy cookies.
Do not chill the dough before baking.
For gluten-free cookies, use a 1:1 gluten-free flour blend.
Dried cherries can be used as a substitute, rehydrate if desired.
Store in an airtight container for up to 3 days or freeze for up to 1 month.
