Description
A rich and indulgent dessert that combines a chewy brownie base, smooth caramel layer, creamy cheesecake filling, and a drizzle of chocolate topping. Perfect for special occasions or when you’re craving something truly decadent.
Ingredients
1 (9 ounce) package brownie mix
1 egg
1 tablespoon cold water
1 (14 ounce) package individually wrapped caramels, unwrapped
1 (5 ounce) can evaporated milk
2 (8 ounce) packages cream cheese, softened
½ cup white sugar
1 teaspoon vanilla extract
2 eggs
1 cup chocolate fudge topping
Instructions
1. Preheat oven to 350°F (175°C). Grease the bottom of a 9-inch springform pan.
2. In a small bowl, mix brownie mix, 1 egg, and cold water until combined. Spread into greased pan and bake for 25 minutes.
3. Melt caramels with evaporated milk in a heavy saucepan over low heat, stirring often until smooth. Reserve 1/3 cup of this mixture, and pour the rest over the baked brownie layer.
4. In a large bowl, beat cream cheese, sugar, and vanilla until smooth. Add eggs one at a time, mixing well after each. Pour over the caramel layer.
5. Bake the cheesecake for 40 minutes. Let cool completely, then chill in the refrigerator for at least 3 hours.
6. Loosen the cake by running a knife around the edge, then remove the springform rim.
7. Warm the reserved caramel and drizzle over the top of the cheesecake. Finish with chocolate fudge topping.
Notes
Chilling the cheesecake overnight improves flavor and texture.
Use room temperature cream cheese for the creamiest filling.
Dip a knife in hot water and wipe between cuts for clean slices.
