Black Garlic Chocolate Cake is rich, moist, and infused with black garlic for bold flavor. Topped with mango-ginger sauce — this is dessert redefined.
Ingredients
For the Cake:
1 cup butter, plus more for greasing pan
⅓ cup organic cacao powder (e.g., Dagoba)
1 cup water
2 cups all-purpose flour
1½ cups organic granulated sugar
1½ tsp baking soda
2 large eggs
½ cup sour cream
1 tsp pure vanilla extract
3 cloves black garlic, peeled and mashed into a smooth paste
For the Mango-Ginger Sauce:
3 cups mango chunks (fresh or frozen)
1½ tbsp ginger spread
½ cup organic granulated sugar
½ cup water
Chocolate shavings (for garnish)
Instructions
For the Cake:
- Preheat oven to 350°F (175°C). Grease a bundt pan generously with butter.
- In a medium saucepan, combine butter, cacao powder, and water. Heat over medium until butter melts, stirring until smooth. Remove from heat.
- In a large mixing bowl, whisk together flour, sugar, and baking soda. Gradually whisk in the warm chocolate mixture until smooth.
- Add eggs, one at a time, whisking thoroughly.
- Fold in sour cream, vanilla extract, and black garlic paste until the batter is uniform.
- Pour into prepared bundt pan. Place in the oven and cook for about three-quarters of an hour, checking for doneness when a skewer pulls out without any batter residue.
- Cool in pan for 15 minutes, then invert onto a wire rack to cool completely.
For the Sauce:
- Add mango pieces, ginger preserves, sweetener, and a splash of water into a pot and mix over medium heat. Bring to a boil, then simmer for 15–20 minutes until thick and chunky.
- Mash or blend for desired consistency.
- Serve warm over slices of cake. Garnish with chocolate shavings.

- Black garlic adds sweetness and umami, not a garlic taste.
- This cake stores well at room temp for 2 days, or refrigerate for up to 5.
