Description

These Biscoff cookies are soft, chewy, and packed with spiced cookie butter flavor, finished with a drizzle of warm cookie butter on top.


Ingredients

1/2 cup butter, softened

1/2 cup white sugar

3/4 cup brown sugar

2 eggs

3/4 cup cookie butter

1 tsp vanilla

2.5 cups flour

1/2 tsp baking soda

1/2 tsp baking powder

1/4 tsp salt

18 Biscoff cookies, roughly crushed

extra cookie butter for drizzle


Instructions

1. Preheat oven to 350°F and line baking sheets with parchment paper.

2. In a large bowl, beat together butter and sugars until light and fluffy.

3. Add eggs, cookie butter, and vanilla. Mix until creamy.

4. In a separate bowl, whisk together flour, baking soda, baking powder, and salt.

5. Gradually add dry ingredients to the wet mixture and mix until fully combined.

6. Fold in the crushed Biscoff cookies.

7. Scoop dough into balls, slightly flatten, and place on baking sheet.

8. Top with extra Biscoff cookie chunks.

9. Bake for 13–15 minutes or until edges are golden.

10. Cool completely on a wire rack.

11. Drizzle with warmed cookie butter before serving.

Notes

Let cookies cool fully before adding the drizzle for best results.

You can store these cookies in an airtight container for up to 5 days.

Dough can be frozen for up to 2 months. Bake from frozen by adding 1–2 minutes.
